Clay Pot Baked Chicken with Apples, Sage and Chives

I have several posts that have recipes for baking chicken in a clay pot. I have listed them below the pictures. In this particular recipe, dice culinary sage and sprinkle it over the top of the chicken 1/2 hour before it is done cooking. You can also add the apples at this time as they cook quite quickly in the clay pot. Serve with fresh raw chives chopped and added as a garnish. The total cooking time for a whole chicken is usually about 1 1/2- 2 hours (depending on the size of the chicken), although you can cook it for longer and still have tender meat.
